Thank goodness strawberry season is here because I just finished my last jar of peaches...and there are only 2 jars of pears left!
I think I'm going to have to can 2 bushel of each this summer. I wonder if prices will be as high as they were last year.

I have one jar of green beans and 2 jars of salsa left. I feel your pain.

I don't feel your pain because I have never canned...but I feel that way every time my last bowl of applesauce (from freezer) is gone. This year we have our first garden. It's small...ten by ten. I plan to just freeze our green beans and corn. But we don't have a second freezer, so even that may be tricky. If I find that I really enjoy gardening, I think I will have to learn how to can. I would love to feed my family fresh foods all year.
Would you share with me what you find difficult and easy about canning? How much does it cost the first year when you buy your equipment...and what do you need other than the mason jars with lids?
I hear you! I've been pretty good about "rationing" my jars, so I still have about 7 or 8 of peaches and pears left, since I've been getting lots of fresh produce. It's amazing how much you need to keep increasing the amounts as you add children to the family!
So that empty jar most definitely looks like it has pee in it ;-)
