Flowerpot Bounty

Earlier this spring I planted basil, parsley, spearmint (and a marigold to keep the squirrels at bay) in a large planter pot on our back deck. It EXPLODED into an herbal bush while we were gone last week.

According to a source I found online, herbs with a higher water content like these do well if frozen. I think I may try that, as there is no way I'll use all of these up before I need to clip some more!

I feel like a food network personality with these in my kitchen! :-)

What are your favorite ways to use fresh herbs?

I've been reading...but not commenting much...sorry. Your trip sounded great...and I really appreciated your candidness about your attitude prior to your trip...I am too often much like that.

The only herb-filled recipe that comes to mind are spiedies! SO YUMMY! Recipe link below.

We had a surplus of storebought fresh basil once, so we rolled it in paper towels and stuck it in a ziploc bag in the freezer. I was amazed how much flavor it retained. We keep our herbs on the deck table as a centerpiece in a big flowerpot. Nothing like snipping it, rinsing it off, and tossing it in sauteed veggies or salsa.

Also love to grab a handful of herbs and throw them onto hot coals on the grill. Their flavor gets infused with the smoke!

love, love, love fresh basil. IT goes in so many dishes and even drinks.

I love cilantro, too and mint. yum, yum.

Lisa showed me last summer that you can freeze basil in a bit of olive oil in a ziplock bag. Works great.

And I have started cutting up cilantro, putting it into an ice cube tray, adding a little water to hold it together, and freezing it. It's so easy to just pop out a few cubes when I need cilantro for a recipe.
