Beat together:
1 c. veg. oil
3 c. sugar
4 eggs
1 ½ tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
Add:
1 c. cooked pumpkin
2 tsp. baking soda
2/3 c. warm water
3 c. flour
Put into 2 greased and floured loaf pans and bake at 350 for 50 minutes.
***A family favorite served sliced and plain or with a bit of whipped cream cheese spread on top.

It is so funny that you just posted this. I was literally just looking at the cookbook you gave me and pondering making this recipe... Nothing says fall like pumpkin recipes!

Sounds yummy - I just cooked up a bunch of pumpkin to put in the freezer. I bet some chocolate chips added in would be extra good, too!
Can't wait to try this. I bought a pumpkin pie yesterday.That's how much I was craving pumpkin.
Funny enough, I really don't like pumpkin pie. And truly, this "bread" recipe might as well be termed cake! :o)
