Chicken Tetrazini with Carrots and Apples

This is one meal we received after having Adam that, to me, spells COMFORT FOOD.

They are both recipes I've been serving half and freezing the rest for an easy meal later.

Chicken Tetrazini

1/2 c. butter
1/2 c. flour
2 tsp. salt
4 c. milk
2 c. cooked and cubed chicken
1 box angel hair pasta, cooked according to package instructions
1 c. mayo
1/2 c. grated parmesan cheese
1 TBsp. dried parsley
1 tsp. black pepper
1/4 tsp. celery seed

Melt butter over medium heat, then whisk in salt and flour while microwaving milk for 2 mins. Slowly add milk to make a white sauce. Stir until thickened, then add to cooked pasta and remaining ingredients in a large bowl. Pour into a 9 x 13 or 2 smaller oven safe dishes. Cover and bake at 350 for 45-60 mins.

*I like to break the angel hair pasta in half before cooking so the mixing of ingredients is easier later.

Baked Carrots and Apples

3 lb. carrots, peeled and sliced lengthwise into 1/4 inch thick strips
6 red delicious apples, peeled, cored and sliced
1/4 c. brown sugar
1/4 c. sugar
1 1/2 tsp. cinnamon
3 TBsp. orange (or lemon) juice
4 TBsp. butter, melted

*if you 1/2 the amount of carrots and apples, keep the "sauce" ingredient amounts the same

Cook carrots in water just until tender.
Combine apples and carrots in greased baking dish.
Combine remaining ingredients and pour over mixture.
Cover and bake at 350 degrees for 45 mins.
