Garlic-Herb Orzo Pilaf

I made this again the other night and it was so yummy alongside our chicken and veggies.

If my memory is correct I got this from the Taste of Home magazine.

1 Tbsp. olive oil
2 tsp. minced garlic
1/2 c. uncooked orzo pasta
1/2 c. uncooked long grain rice (I used an unseasoned brown and wild rice blend)
2 c. chicken broth
1/3 c. water
1/4 tsp. dried basil
1/4 tsp. dried parsley
1/4 tsp. salt

1. In a large skillet, heat olive oil over medium heat; once oil is hot, add garlic and cook for 2 mins.

2. Add orzo and rice; cook 5-6 mins. until lightly browned.

3. Slowly stir in broth and water, bring to a boil, then cover, reduce heat, and simmer for 20 mins.

4. Add seasoning at the end before serving.


(Makes 4 servings)

***Sometimes I like to throw in some craisins while everything is simmering, then garnish with sliced almonds
