German Apple Pancakes

This is something my father-in-law would make when Pete was a boy. It's one of those things I like to cook up after church on Sunday when it's just us. We usually sprinkle cinnamon sugar or powdered sugar over the top, (pancake syrup works too), and have turkey sausages and applesauce as sides.

1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar
1 egg, beaten
1/2 c.--1 c. milk (according to preferred thickness; I use a full cup)
1 Granny Smith apple, peeled, thinly sliced, then chopped

Sift dry ingredients together.
Beat egg & milk together. Add to dry ingredients; stir until batter is smooth. Add apples.
Cook in skillet w/1 Tbsp. melted butter over med./low heat. If using a non-stick skillet, you can probably omit the butter.
Makes 8 pancakes.
