Lemon Sponge Pie

***This is a family favorite and comes from my Mom’s friend, Margaret Nauman.

1 lemon
¾ s. sugar
3 Tbsp. flour
3 eggs, separated
¾ tsp. salt
2 Tbsp. melted butter
1 1/3c. milk
1 unbaked 9” pie crust

Beat egg whites until stiff. Put in separate bowl.
Use grated rind & juice from lemon to mix with sugar, flour, yolks, salt, butter and milk.
Carefully fold in eggs whites.
Bake for 40 minutes at 325 degrees.
(My oven is really hot, so I bake it for 55 minutes at 300 degrees.)
