Now, I love trying new recipes, but I also have a few rules. Not only does it need to sound yummy, but it's got to be at least partly healthy, and I don't want to buy more than 2 "out of the ordinary" ingredients.
Well, Pete and I enjoy the standard Asian food--nothing too crazy. So when I saw an easy recipe for Chicken Lo Mein, I immediately wanted to try it. It didn't sound intimidating at all!
I made some changes though. I used half the bottle of Ken's Steakhouse LITE Asian Sesame with Ginger & Soy dressing instead of 1/4 c., ( I couldn't find the Kraft brand and we like alot of sauce), fresh peppers (1 red and 1 green), a sprinkling of dried minced onion, (Pete's stomach is sensitive to raw and partially cooked onion), and doubled the PB and broth. I also omitted the cilantro--not a big fan!
We all loved it! It's definately going into the rotation! I couldn't believe how easy it came together. I also plan to try their Saucy Pepper Steak recipe next week.

It's funny that you posted this because I plan on making a Peanut Chicken Stir-fry this week and Josh was saying he'd like to try Chicken Lo-Mein! :) So glad you're passing on this recipe!
I am SO glad you tried this recipe! Isn't it just scrumptious?!? We LOVED it! I couldn't get the Kraft dressing either, so I think I used the Ken's brand as well. I love that you can just add more sauce depending on how many other things you throw into it. SO EASY!!! You've got to try the strawberry jam bars too....OH MY GOODNESS....SOOOOO GOOD!!!
